The Day After Hash--good for Diabetic Diets, Too!

Are you wondering how you can use up all that leftover turkey?  Are you looking for a new way to use it that will surprise your family?  Try this Day After Hash!  Surprise your family and/or friends at breakfast or brunch with this turkey hash.  It is quick, easy, and economical and what a surprise.  Serve the hash over toast with an egg on top for a breakfast treat.  Or enjoy it for lunch with a leftover roll and leftover cranberry salad or sauce. THE DAY AFTER HASH 8 tbsps (1 stick) butter 1/2 cup sifted all-purpose flour 3 cups chicken broth 4 cups finely chopped turkey 1 cup finely chopped celery, blanched for a few minutes in boiling water, drained, and rinsed until cold 1/4 cup heavy cream 2 egg yolks 2 tbsp dry sherry, if desired salt and pepper to taste In a heavy skillet over medium heat, melt butter, add flour, and stir with a wooden spoon or wire whisk until mixture is smooth, bubbly, and golden.  Remove from heat and slowly add chicken broth, stirring constantly.  Return to medium heat and simmer uncovered for five minutes.  Add turkey and celery, reduce heat to low and continue simmering.  You can keep hash warm up to one hour this way. Just before serving, in a small bowl, beat cream into egg yolks.  Distribute mixture evenly over hash and fold in with a rubber spatula.  Remove from heat and fold in sherry, if using.  Add salt and pepper to suit your taste.    Serves 6 to 8. Note:  A good way to serve is over toast with a poached or fried egg in the center. Enjoy!
