The dough is the heart of a pizza (in my humble opinion), and I believe Bev did a great job in her video explaining it. As you can imagine, a video really helps illustrate exactly how to execute certain things; dough tossing and dough kneading to name a few. At the moment, this is my favorite part of Secrets from Inside the Pizzeria.
