Bellingham Has Great Mexican Food

Bellingham has great Mexican Food   At the north end of I-5, a long 1400 miles from Tijuana, one can still find good Mexican food. I consider myself to be a bit of an expert since I lived the first half of my life within 12 miles of the other border and 2 years in Mexico. I then moved to Whatcom County.  I started my Real Estate career in Bellingham, WA and brought my love of Mexican food with me.   I consider Mexican food to be an essential and am tuned in to the subtle hints that point to a good meal. The ambiance must be correct with Mexican music and bright art work. Pictures of Poncho Villa help. The food must be traditional. Some restaurants in Bellingham meet these requirements and serve a fine meal. Others do big no-nos such as pre-formed taco shells and Jalapeño Poppers filled with cream cheese. Read on to find fine Mexican food.   The first on my list is Diegoð€™s II located on N. Samish Way and can be found on the net at www.DiegosMexicanGrill.com. Diegoð€™s is a Mexican Grill and take-out restaurant sporting authentic paint colors, healthy low-fat cooking and 4 complex salsa picante sauces. You place an order at the counter and your plate is usually delivered at your table. How they remember whoð€™s who is beyond me. Diegoð€™s has a liqueur license, a fabulous margarita and a large outside dining area.     The second eatery on my list is Taco Lobo located on Magnolia in the center of Bellingham. If you like, you may sit outside. The bar is well stocked and they have a huge Chili Relleno that comes right out of Old Mexico. The visitor places an order at the counter and takes a number to the table. The tortillas are made just before you eat and there are 8 different salsas to choose from.   Third on my list of fine south-of- the- border dining is El Gitano located in the Sunset Square. The food is traditional and the decor matches the food. I recall a night when an authentic Mexican band was setting up. The sounds made me think I was in warmer climes. Why donð€™t we have more mariachis in Bellingham?   There are more fine Mexican restaurants at this end of  I-5 and these are my favorites in Bellingham. My love of Mexican food is continuing in Whatcom County.
